The varieties of “Top Quality wheat” is the best in the world: they have characteristics of excellence, including a high protein content and a great qualitative index of gluten: the aureo grain is positioned in the highest.
14.5% PROTEIN CONTENT OF PASTA
From June 2010 to October 2013, about 130,000 tons of aureo grain came to the mill of Altamura, with an average content of protein high, even in very different climatic conditions.
The goal was to achieve a variety of hard wheat grown in Italy, able to guarantee that excellence of the technological parameters (protein content and strength of gluten) that characterize it as “Top Quality”, reachable generally only in environments with climatic conditions very special.
