Provolone mandarini

Provolone is a typical product of traditional Italian cheese making. It is a semi-hard stretched curd cheese. It is produced using exclusively the whole milk of cows from the cowsheds of the milk providing partners. After natural acidification, the curd is spun and shaped while warm. The Certification of Controlled Supply Chain guarantees control of all elements that contribute to the final outcome of the product starting from feeding the animal destined for milk production in respect of complete Traceability.

The Mandarino is the classic sharp Provolone: its very characteristic, recognisable shape is typical of the Campania region, where it originated; it is particularly appreciated in Puglia but nowadays people everywhere appreciate this delectable product. Provolone Mandarino, available in large and medium sizes, is produced respecting the most genuine traditions, using – exclusively in the sharp type – strong rennet (kid goat, lamb). The cheese is shaped by hand by workers with a lot of experience and great care is taken in the maturing process. The result is an unmistakable cheese, slightly flaky and soft and with a typical aroma and decisive sharpness. It is a cheese for connoisseurs.
