Durum wheat semolina pasta with 5 flavors: semolina, spinach, chard, turmeric, tomato. The Orecchiette are the most typical cut of pasta in Puglia. The shape is a round disk and is slightly hollow in the middle. In traditional recipes, the Orecchiette are blanched together with broccolior potatoes and seasoned with a tomato-based sauce, sprinkled with pecorino cheese or are excellent only with oil and garlic. They are also served with vegetable ragout or lamb and ricotta. Cooking time: 5 minutes.
